5. Green tomatoes on toast
This one is hardly even a recipe, more an idea for a quick, healthy and delicious snack. Toast a couple of substantial slices of bread (I'd use a good-quality wholemeal). Rub lightly with half a clove of garlic and top with tomato slices. Grill again briefly to warm the tomato. Add a drizzle of extra virgin olive oil and some fresh basil leaves. This is delicious as a quick brunch with a poached egg on top, but cheese or pesto would be excellent alternatives.
